| GRILLED VEGETABLES WITH FRUIT CHUTNEY SANDWICH |

Ingredients |

1 medium red pepper, seeded & quartered |
| 2 |
1 medium eggplant, slice lengthwise, 5cm |
| 3 |
1 small yellow onion, peeled, cut into 1cm thick rings |
| 4 |
1/2 small pumpkin, skinned, cut into 1.5 cm thick wedges |
| 5 |
Any store bought fruit chutney |
| 6 |
8 slices of rustic bread |

Method
|
|
- Preheat oven @ 200C for 10 mins.
- Place all sliced vegetables on an oiled baking tray.
- Drizzle olive oil over the vegetables, season with sea salt, black pepper and thyme.
- Grill veggies for 15 to 20 mins or until soft. Cool.
- To make the sandwiches, spread chutney on to bread slices, put in the assorted veggies.
