GRILLED VEGETABLES WITH FRUIT CHUTNEY SANDWICH
  Ingredients
1 1 medium red pepper, seeded & quartered
2 1 medium eggplant, slice lengthwise, 5cm
3 1 small yellow onion, peeled, cut into 1cm thick rings
4 1/2 small pumpkin, skinned, cut into 1.5 cm thick wedges
5 Any store bought fruit chutney
6 8 slices of rustic bread
   

 Method

 

  1. Preheat oven @ 200C for 10 mins.

  2. Place all sliced vegetables on an oiled baking tray.

  3. Drizzle olive oil over the vegetables, season with sea salt, black pepper and thyme.

  4. Grill veggies for 15 to 20 mins or until soft. Cool.

  5. To make the sandwiches, spread chutney on to bread slices, put in the assorted veggies.
