CHICKEN WITH TOASTED ALMOND SANDWICH
  Ingredients
1 Chicken breast, steamed & cooled, cut into 1 cm cube 200g
2 Carrot, cubed, blanched, cooled 50g
3 Mayo 50g
4 Toasted almond flakes 50g
5 Rustic bread 8 slices
     

 Method

 

  1. Mix all ingredients well and season with sea salt and pepper to taste.

  2. Keep chilled for at least one hour before using. Can be done ahead of time.

  3. To make sandwiches, spoon desired amount of chicken filling on to bread slices, top with lettuce leaves.
