| CHICKEN WITH TOASTED ALMOND SANDWICH |

Chicken breast, steamed & cooled, cut into 1 cm cube |

Method
|
- Mix all ingredients well and season with sea salt and pepper to taste.
- Keep chilled for at least one hour before using. Can be done ahead of time.
- To make sandwiches, spoon desired amount
of chicken filling on to bread slices, top with
lettuce leaves.
