PENNE SALAD WITH SUNDRIED TOMATO DRESSING
  Ingredients
1 250g penne pasta, boil according to packet instructions, cooled
2 100g cherry tomatoes, halved
3 100g green zucchini, cut into matchsticks
4 50g kalamata olives, pitted, halved
5 20g fresh basil leaves
   
  Dressing
1 30g marinated sundried tomatoes
2 100g white wine vinegar
3 120g extra virgin oilve oil
4 Sea salt and black pepper to taste
   

 Method

 

  1. To make the dressing, place all ingredients in a food processor. Mill till sundried tomato is finely chopped.

  2. Place pasta and all cut vegetables in a large mixing bowl. Pour in dressing and gently toss the pasta salad. Keep chilled untill ready to serve.
