APPLE WALNUT SALAD WITH HONEY YOGHURT VINAIGRETTE: Gluten Free

  Ingredients
1 Granny Smith apples, cored, sliced thinly, medium size, chilled 2
2 Radicchio leaves, washed, torn and kept chilled 1 cup full
3 Walnuts, toasted with tsp orange rind and butter 1 cup full
     
  Vinaigrette  
4 White wine vinegar 1/4 cup
5 Extra virgin olive oil 1/4 cup
6 Manuka Honey 1 tbsp
7 Plain yoghurt 1/4 cup
8 Sea salt pinch to taste
9 Black pepper, ground pinch to taste
     

 Method


  1. In a frying pan, toast walnut with 1 tbsp butter, 1/2 tsp brown sugar, pinch of sea salt and the orange rind over medium heat until fragrant, about 3 mins.
    Let walnut cool completely and set aside.

  2. Combine all the vinaigrette ingredients by whisking thoroughly in a bowl.
    Keep chilled until ready to use.

  3. Toss apple, radicchio and walnuts together with enough dressing to taste.

  4. Serve immediately.
