APPLE WALNUT SALAD WITH HONEY YOGHURT VINAIGRETTE: Gluten Free |

Ingredients |

Granny Smith apples, cored, sliced thinly, medium size, chilled |

Radicchio leaves, washed, torn and kept chilled |

Walnuts, toasted with tsp orange rind and butter |

Vinaigrette |

White wine vinegar |

Extra virgin olive oil |
1/4 cup |

Manuka Honey |
1 tbsp |

Plain yoghurt |
1/4 cup |

Sea salt |
pinch to taste |

Black pepper, ground |
pinch to taste |

Method
|
- In a frying pan, toast walnut with 1 tbsp butter, 1/2 tsp brown sugar, pinch of sea salt and the orange rind over medium heat until fragrant, about 3 mins.
Let walnut cool completely and set aside.
- Combine all the vinaigrette ingredients by whisking thoroughly in a bowl.
Keep chilled until ready to use.
- Toss apple, radicchio and walnuts together with enough dressing to taste.
- Serve immediately.
