100% ALMOND CUPCAKES: Gluten Free
  Ingredients
1 Ground almond 230g
2 Cornflour 30g
3 Baking Powder 2g
     
4 Eggs 2
5 Organic Unrefined sugar 80g
6 Vanilla 2g
7 Butter, melted 25g
8 Milk 50g
     
9 Icing sugar 250g
10 Lime juice 60g

 Method


  1. Pre-heat oven to 180 degrees C. Line 10 x 2" diameter cupcake moulds with paper cup.

  2. Mix the ground almond, cornflour and baking powder well. Set aside.

  3. With a wire whisk or electric mixer, whip eggs and sugar until fluffy.

  4. Add vanilla, butter and milk. Lightly mix into eggs mixture.

  5. Gently fold in the dry mixture.

  6. Spoon in cake mixture into the cupcake mould, about 3/4 full.

  7. Bake in the preheated oven for 18 - 25 mins or until cooked when tested with a skewer.

  8. Combine the icing sugar with the lime juice and stir until smooth.

  9. Ice the cupcakes and top with silver sugar balls.
