Method
|
|
- Pre-heat oven to 180 degrees C. Line 10 x 2" diameter cupcake moulds with paper cup.
- Mix the ground almond, cornflour and baking powder well. Set aside.
- With a wire whisk or electric mixer, whip eggs and sugar until fluffy.
- Add vanilla, butter and milk. Lightly mix into eggs mixture.
- Gently fold in the dry mixture.
- Spoon in cake mixture into the cupcake mould, about 3/4 full.
- Bake in the preheated oven for 18 - 25 mins or until cooked when tested with a skewer.
- Combine the icing sugar with the lime juice and stir until smooth.
- Ice the cupcakes and top with silver sugar balls.
